Chicken and Dumplings

I was born and raised in the great state of Pennsylvania. I grew up eating a lot of PA Dutch cooking and one of my favorite foods was chicken and dumplings. I usually make everything from scratch but that can take a while. I decided to take that same recipe and use pre made ingredients to speed up the cooking time.

Ingredients:

4 skinless, boneless, chicken halves

1 bag of frozen mixed vegetables

1 small onion, diced

2 Tbs butter

2 cans of condensed cream of chicken soup

2-10 oz. packages of refrigerated biscuit dough

Chicken broth

Salt and pepper

Preparation:

In a large pot, place onion, butter, condensed soup and chicken. Add chicken broth (enough to cover the chicken).

Stir well. Add salt and pepper to flavor. Let cook for about an hour to an hour and a half or until chicken is thoroughly cooked.

Add the bag of frozen vegetables. Stir. Continue to cook until chicken and vegetables are fully cooked.

Tear biscuits into bite sized pieces and drop on top (do not stir in). Let cook for about 30 minutes. When the dough is cooked it is ready to be served.F9

I only ended up using 2-3 biscuits as the dumplings and just placed the additional ones in the oven.

Pretzel Dogs

There is a local farmer’s market near me and one of the stands sells hand made pretzels. I have never tasted any pretzel THAT good. Soft pretzels are one of those foods that you just can’t get enough of, especially when they are warm! The soft, buttery flavor just melts in your mouth. I have been wanting to make pretzels for a long time and I actually had everything I needed in my pantry to make them so I got to work! I made a few soft pretzels, but used most of the homemade dough to make some pretzel dogs for my family for lunch. They turned out beautifully and everyone loved them! This recipe makes a large batch. It is great because you can make and eat some now and refrigerate/freeze the rest for another day!

Ingredients:

Hotdogs (or sausages)

Pretzel Dough Ingredients:

1-1/2 Cups Warm Water

1 Tbs Sugar

2 Tsp Kosher Salt (reduce the amt. if using table salt)

1 Package Active Dry Yeast ( 2-1/4 tsp)

4-1/2 Cups All-Purpose Flour

2 Oz. Unsalted Butter, melted

Vegetable Oil (to coat pan)

Baking Soda Bath:

10 Cups water

2/3 Cups baking soda

Egg Wash:

1 Large egg yolk, beaten with 1 Tbs water

Topping:

Kosher Salt or Pretzel Salt

Directions:

1. If using bread maker, combine warm water, sugar, salt, yeast, flour and unsalted butter and set for the dough cycle. Once the cycle is complete, move on to step 7.

2. If using a mixer, combine warm water, sugar, salt and yeast. Stir and allow to rise for 4-5 minutes.

3. Once mixture has risen slightly, put flour in the bowl of the mixer, add the yeast slurry, melted butter and using the dough hook, kneed on low until the dough comes together.

4. Increase speed to medium and kneed until the dough is smooth and pulls away from the sides of the bowl.

5. Remove dough from the bowl, spray it with nonstick cooking spray, then return the dough back into the bowl. Cover with a clean towel and place in a dark, dry place to rise for 1 hour.

6. Preheat oven to 450 degrees F. Line baking sheet(s) with parchment paper and brush with the vegetable oil. Set aside.

7. In a large pot, bring 10 cups water and 2/3 cups baking soda to a boil.

8. Turn the dough out onto an oiled surface and divide it into small pieces (the size of a golf ball).

9. Roll each ball into a rope and wrap it around the full length of the hotdog or sausage. Pinch the ends on themselves to prevent them from unwrapping. Or you can shape the dough into a pretzel shape.

10. One by one, place the pretzels/pretzel dogs into the boiling water for 30 seconds. Using a large spatula remove them from the water and place onto the oiled baking sheet.

11. Brush on with beaten egg wash and sprinkle with salt.

12. Place in oven until golden brown in color, about 10-12 minutes.

Kit-Kat Cake

How cute is this cake?! Not only does it look awesome, but it’s really simple to make! I made this cake for my husband’s birthday one year and it was a hit!

Ingredients:

1 box of your favorite cake mix

4 large packages of Kit-Kat Bars

One 12.6 oz. bag of candy (M&M’s, Reese’s, etc.) You can also use fresh fruit.

Color Ribbon of your choice

Directions:

1. Prepare cake mix as directed on the box. Grease and flour two 9-inch round cake pans.

2. Divide the batter into the prepared round pans. Bake the cake rounds about 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 20 minutes, then remove the cake layers to a wire rack to cool completely.

4. When the cake is cool, you’re ready to assemble. Place one layer on a serving plate, and tuck strips of waxed paper underneath the sides of the cake.

5. Frost the 1st cake layer. Set the 2nd layer on top of the first. Frost the 2nd layer and along the sides of the cake too. Stick Kit Kat’s to the sides of the cake, leaving a very small space in between each Kit Kat (1/4-inch). Wrap a bow around the cake, securing the Kit Kat’s. Fill the top of the cake with your choice of candy. Pull out the strips of waxed paper and discard.

Whole Wheat Pizza Dough

Whole Wheat Pizza Dough Recipe

I absolutely LOVE pizza. I probably eat it at least once a week. The downfall is it’s not really that healthy for you (bummer). I have been trying to eat healthier so I have been searching for a good pizza recipe that isn’t as horrible for you to eat. I came across an AMAZING recipe. This pizza dough recipe calls for honey which makes the flavor of the crust rich and flavorful. This recipe comes from Laurie McNamara (simplyscratch.com).

Ingredients:

1 packet or 1-1/4 tsp of Active Dry Yeast

1/2 tsp Honey

1 cup warm water (110-120 degrees F.)

1 tsp olive oil

1-1/2 cups All-Purpose Flour

1 cup Whole Wheat Flour

3/4 tsp Kosher Salt

**This recipe makes 2 medium thin crusts or one large regular crust.


This pizza dough recipe not only tastes great, but is very simple to make and doesn’t take a lot of time!

In your mixer bowl add the honey, warm water and stir to dissolve.

Sprinkle the yeast on top and let it sit for about 5 minutes.

Add in the olive oil and turn your mixer on low.

Gradually add in your all purpose and wheat flours and increase the mixing speed.

Season the dough with salt and continue to mix the dough until it forms a ball inside the bowl.

Remove the dough and form a smooth ball.

Put the dough in a well oiled bowl. Cover with a clean towel and place the bowel in a warm, dry place to rise for 1 hour.

Your dough should look something like this. Use your hands to press the gas out of the dough and roll into the desired size.

Use your favorite sauce and toppings and bake in the oven at 400 degrees F. for 15-20 minutes or until crust is golden brown.

EATING HEALTHY ON A BUDGET

Great tips on how to eat healthy on a budget!

Sticky Buns

Ok, so this isn’t your normal sticky bun recipe. It literally takes 5 minutes to prepare and 20 minutes to bake. Super easy!!

Ingredients:

1-2 tubes Pillsbury Grands buttermilk biscuits

3 Tbsp. butter, melted

1/2 cup maple syrup

1/3 cup packed brown sugar

1/2 tsp. cinnamon

1/4 cup pecans, optional

1/4 cup chopped almonds, optional

Instructions:

Spray bundt pan with a non-stick spray. (I used just a small cake pan)

In a bowl, combine the melted butter and syrup; set aside.

In another bowl, combine brown sugar, cinnamon, and nuts (optional).

Place half of the syrup mixture in the bottom of the bundt pan and sprinkle half of the brown sugar mixture on top. Lay biscuits, evenly saved and overlapping, in the bottom of the pan to form a ring. Pour the remaining syrup on top of the biscuits and then sprinkle the rest of the brown sugar mixture over top.

Bake at 375 degrees F for about 20 minutes or until golden brown. Cool for about 1 minute in the pan, then invert onto a large plate or serving platter.

These sticky buns are great for a simple breakfast or dessert. Enjoy!
